Across the country, healthcare providers are increasingly recognizing something communities have long understood: the food we eat plays a powerful role in our health. In Archuleta County, we have been promoting this idea through collaborative work with our partners and community members.
Research consistently shows that diets rich in fruits, vegetables, legumes, and whole grains can help prevent or manage chronic conditions such as heart disease, diabetes, and obesity. In rural communities, however, access to fresh, nutritious foods can sometimes be limited.
That is one reason that Healthy Archuleta, in collaboration with the community, is exploring the development of the Archuleta Community Food Hub & Food Hall. The project aims to strengthen connections between local growers, food businesses, and residents while expanding access to healthy local food. By creating infrastructure that supports local agriculture and food distribution, the Food Hub could help bring more fresh produce and locally grown ingredients into homes.
Healthcare partners are also increasingly interested in how food can support prevention and long-term wellness. When communities improve access to nutritious foods, they are also investing in better health outcomes.
Residents will have an opportunity to learn more about these ideas at the 2026 Archuleta Food Summit on Saturday, April 18. The event will bring together growers, local organizations, and community members and leaders to explore the future of Archuleta County’s food system.
The Summit will feature an interactive session simulating how the proposed Food Hub could function, along with a farm-to-table lunch highlighting locally grown ingredients.
