The owners of the upscale Alley House Grille, Kellie & Todd Stevens, have created a popular new venue on the Pagosa Springs restaurant scene … the country French Tavern Le Boeuf.

Tavern Le Boeuf is not quite the classical French restaurant — but it may be better.  The word “tavern” is used a little loosely, because although there is a modest bar at the back, this place is about dining.

After the short selection of salads including a Smoked Trout Salade Nicoise, you’ll find French appetizers like Escargot, Pommes Frites, and French Onion Soup, and then tempting starters such as the Petite Rosemary Pork Shanks Confit with Sherry Caramel Onions.  Among the 10-12 entrees, they offer falling-off-the-bone Cabernet Short Ribs ($25); Chicken, Mushroom & Spinach Crepes ($14); a Petit Filet with Cognac Cream Peppercorn sauce ($30); a Chicken Veloute en Croute ($13) which they emphasize is “not your mom’s chicken pot pie”; and a Striped Bass Meniere (sauteed in brown butter), for $22.

The wine list is not bad, either, for a self-proclaimed “rustic French tavern”.
